Hearts of Palm & Avocado Salad
Ingredients:
- 1 can of Signature Pupunha Hearts of Palm
- 2 ripe avocados
- A handful of fresh coriander
- 3 tablespoons of olive oil
- 1 tablespoon of lime juice
- Zest from half a lime
- 1 clove of garlic (minced)
- ½ teaspoon of salt
Instructions:
- Finely chop the coriander and mix it with the minced garlic, olive oil, lime zest, and juice in a bowl. Let it sit for a bit to let the flavours do their thing.
- Open your can of hearts of palm and chop them to your desired thickness—go thicker if you want a nice crunch or thinner if you want them to blend seamlessly with the rest of the ingredients. Add them to your flavour-packed bowl.
- Now, peel and chop the avocados, and mix them in with the hearts of palm. Give everything a good stir, and let it rest until you’re ready to dig in.
