Premium Cod Loin

Our Premium Cod Loin is one of the most traditional and highly prized cuts of salt cod. Carefully selected from the thicker central section of the fish, it offers firm, succulent and beautifully flaky flesh, with a rich and distinctive flavour.

A generous and versatile cut, it is perfect for traditional Portuguese recipes as well as modern dishes where the quality and texture of the cod can truly shine.

How to Desalt Salt Cod

Proper desalting is essential to achieve the perfect balance of flavour while preserving the cod’s firm, delicate texture.

1. Rinse the cod
Rinse the cod loin under cold running water to remove any excess salt from the surface.

2. Soak in cold water
Place the cod in a large bowl and cover completely with plenty of cold water. Keep refrigerated for 24 to 48 hours, depending on the thickness of the cut.

For the best results, change the water every 8 hours.

3. Check the seasoning
Before cooking, taste a small piece to check the salt level. If it is still too salty, continue soaking for a few more hours, changing the water again if necessary.

Tip: Always keep the cod refrigerated throughout the desalting process to preserve its freshness, quality and texture.
